This is a typical 21st century caviar. Just like Bjørk Premium, the eggs are from a hybrid sturgeon farmed in the south Yunan Province. These fish produce large (minimum 3.2 mm) dark golden eggs. It is immensely creamy, dense and nutty. At its best enjoyed either on its own or with very subtle pairings.
